I had asked if anyone had any good homemade granola recipes at the end of a post a few days ago. Nobody, not even my mom left me a comment with a recipe, and Mom, I know you have a good one, because I've tasted it. I found one online at that I'm going to give a whirl at. Here it is, if anyone else wants to try it too. I'll be sure and let you know how it tastes.
Ingredients
- 1/4 cup butter or margarine, melted I'll use Smart Balance
- 1/4 cup honey
- 1 1/2 teaspoons ground cinnamon
- 1/2 teaspoon salt We'll leave out the salt for Mat's heart
- 3 cups old-fashioned oats
- 1 cup flaked coconut
- 1 cup chopped walnuts
- 2/3 cup raisins
Directions
- In a bowl, stir butter, honey, cinnamon and salt until well blended. Combine the oats, coconut and walnuts in a greased 13-in. x 9-in. x 2-in. baking pan. Add butter mixture and stir to coat evenly. Bake at 275 degrees F for 50-60 minutes or until golden brown, stirring every 15 minutes. Add raisins. Cool, stirring occasionally. Store in an airtight container.

Remember how I told you I was going coupon crazy? Well, here's a coupon for $1 off any Quaker oatmeal and it doesn't expire until 4/30/10. We'll be able to get at least two uses out of this. It does require you to already have installed or to install the coupon printer. Just follow the prompts and save it to your computer.

Sorry! I never saw anything about you asking for a granola recipe. I'll try to send you my recipe soon. We have to leave the house in 15 minutes for our 50+ Dinner night. Enjoy the granola you're making!
I got this recipe from a friend here in Laos. I eat it every day and love it.
MIX in pan:
¾ cup oil (or butter)
¾ cup water
1-2 tsp vanilla
1 cup brown sugar
ADD:
About 6-7 cups oatmeal (not instant)
1 cup cashews
1 cup almonds or any kind of nut
1 T cinnamon
(and optional ingredients below, such as…)
1 cup wheat germ or ground flaxseed
½ cup sesame
Bran
Stir till well blended and place pan in oven set at 325 F
Cook for one hour (or until crisp and brown). STIRRING EVERY 15 MINUTES.
When finished, remove from heat and add:
1 cup raisins
1 cup dried cranberries or other dried fruit (optional)
COOL and STORE in airtight container for 2 weeks or in freezer for 2 months.
Thanks Amy! I'll try it out as soon as we get more vanilla extract! My dad brought back vanilla bean from Madagascar and made extract for us a few years ago. We've recently run out :(
